so it begins my ‘adventure’ as a vegan for this coming weeks. i said adventure because i have never tried being a vegan before nor have i wanted to be one. but, because of many reasons, i’m giving it a go. and so far, not baaaaaad :)
i started my adventure in the land of the amateurs. wilted spinach. feta. puff pastry. oven. and voila!
i have a confession to make. that is not how i imagine how my ‘parcels’ would look like. i waited too long and the pastry was a tad soggy when i started ‘parcelling’ but hey, just like what Heston Blumenthal once said, “The best successes in the kitchen often come from accidental mess.”
and have i mentioned that they tasted wonderful?! four parcels. one very happy tummy.
